Umeshu is Japanese plum wine, and this bottle is built around its sweet and tart ume note, rounder and deeper than a western plum. Green apple sits on top, crisp and almost soda bright, and a brown sugar base underneath brings a warm caramelised edge with a hint of molasses. No ice, and the three layers arrive in that order on every draw.
